Breakfast tortilla omelet folded in a skillet with eggs, taco meat, cheese, and vegetables

There are two kinds of weekday breakfasts: the ones you plan to make, and the ones you actually make when everyone is hungry and time is fake. This lives firmly in the second category.

I’ve been making this breakfast tortilla omelet on repeat lately, mostly because it looks impressive, takes almost no effort, and keeps people full long enough to function like adults. It’s part omelet, part soft taco, and entirely forgiving.

If you can crack eggs and flip something without panic, you’re already qualified.

What You’ll Need

  • 2 eggs
  • Salt and pepper
  • 1 tortilla (flour works best)
  • Oil or butter (I use avocado oil)

Fillings (use what you have):

  • Cooked bacon or sausage
  • Diced bell pepper
  • Green onion
  • Tomato
  • Shredded cheese

This is a judgment-free recipe. Leftovers welcome, I used some leftover taco meat I had for the one pictured above.

How to Make It (No Overthinking Required)

  1. Heat a skillet over medium heat and add oil or butter.
  2. Whisk the eggs with salt and pepper, then pour evenly over the bottom of the pan.
  3. Place the tortilla on top of the eggs and gently press it down with a spatula.
  4. Lightly spray or brush the top of the tortilla with oil.
  5. Let it cook for about 2–3 minutes, until the eggs are set but not browned.
  6. Flip the whole thing so the tortilla is now on the bottom.
  7. Add your chosen fillings to half the surface.
  8. Fold it over like a soft taco and let it cook for another minute or so to let the cheese melt.

That’s it. No oven. No drama.

How to Serve It

Slide it onto a plate and serve with whatever condiment makes sense in the moment. Salsa, ketchup, hot sauce, or just quiet satisfaction.

This works for breakfast, brunch, and the “it’s technically lunch but I’m still tired” hour.

Why This One Should Be On Your “Go-To” List

  • It’s fast
  • It uses ingredients you already have
  • It looks way more involved than it actually is

This is one of those meals that feels like a win without asking much from you. Those are worth keeping.

Good food doesn’t have to be complicated. It just has to show up when you need it.

I’m Shawna

I spent most of my adult life comparing myself to other moms and wives around me, thinking I had to measure up. I always seemed to find myself lacking, until I finally decided that I wasn’t going to think that way anymore. Now my “Good Enough” is “Done Well” and my heart and soul are content.
